GRAPE-VARIETIES Marsanne, Roussanne, Grenache blanc.
SOIL The vineyards are located directly below an amphitheatre hollowed out by the river Orbieu, in the Lagrasse area, at the foot of Mount Alaric. Partly sheltered by the southern tip of Mount Alaric from the westerly ‘Cers’ wind that blows across lower Languedoc, Lagrasse enjoys a Mediterranean climate that is very conducive to late ripening. The elevation of the vineyard, between 100 and 150 metres above sea level, mitigates the high summer temperatures.
WINEMAKING The grapes are harvested at the start of the morning to preserve the freshness of the fruit. They are then destemmed, put into tanks for short skin-contact maceration and subsequently pressed in a pneumatic press. We then use cold clarification to clarify the juice prior to fermentation. Fermentation lasts 2 weeks at low temperatures after yeast has been added.
TASTING NOTES An aromatic, fruity white wine with an elegant, refined structure. Drink within the first three years after bottling whilst still fresh. Drinking temperature: 12°C.
